Food allergies occur when there is an immediate immune response to a certain food protein. The body’s immune system mistakenly sees the protein as harmful, produces antibodies to fight it, and then releases histamine and other chemicals into the bloodstream, leading to an allergic reaction. The reaction may be mild or severe, including: dermatitis, gastrointestinal distress, or respiratory distress. One of the most common food allergies occurs from peanuts. Some other common allergies are to tree nuts, eggs, milk, soy, wheat, fish, and shellfish. (Food allergies occur in approximately 8% of children and 4% of adults).
Food allergies should not be confused with food sensitivities. Food sensitivities are much more common than allergies and are increasing at very high rate due to our diets. Food sensitivities may illicit similar symptoms as food allergies, but typically present as very common symptoms that occur on a daily basis.
Symptoms of food sensitivities include:
Headaches and migraines
Reflux
Chronic sinus congestion
Thyroid issues
Fatigue
Weight gain
Unexplained muscle and joint pain
Constipation
Diarrhea
Weak immune system
Since food sensitivities elicit a delayed immune response they have been linked to autoimmune disorders such as Crohn’s Disease, Fibromyalgia, Rheumatoid Arthritis, Lupus, etc.
The best way for food sensitivity testing is done through blood work. Your blood would be tested and monitored over several days to see how your immune system reacts to the food. Many times symptoms such as a headache may not occur for three to four days after it has been ingested.
